EVERYDAY COOKING

FOR EVERYDAY PEOPLE

Eat well, cook more, strengthen your skills

February 4, 2019

There's really only one cereal that I ever recommend to people. It's the only one that provides any measurable benefits when it comes to lowering LDL cholesterol (the bad one), improving blood sugars, and actually manages to get the bowels moving predictably.  But, if you've ever had All-Bran buds, you know they look like hamster pellets, and taste like cardboard. It's annoying to me when health food tastes like health food.

I've let two, surprisingly expensive, boxes go stale in my cupboard, because des...

Rounding up an assortment of my weekly eats, interests and random bits. A place to share things I have actually enjoyed in real life

Things to eat:

Miso Broccoli Bowl from Smitten kitchen

This sauce is sooo good that it's actually worth keeping tahini and miso in the house (they have a pretty long shelf life).  I usually make this as written in her recipe. However,

I actually preferred how I made it this week:

  - broccoli, carrots, onions roasted.

  - serve with chickpeas instead of rice and her a...

As I've grown [kind of, sort of] wiser, I have learned that some of the greatest things in life happen by accident or when you least expect it. It's often true for events: the ones I over plan, micromanage and have the highest hopes for, often flop and yet sometimes, a random Friday night when you have no clue what you're going to do, awesomeness just flows, and they seem to be the most memorable. I find this is also true with recipe development. Some of those off-the-cuff dinners where I'm cleaning out...

Things to eat:

Mexican green salad from Cookie and Kate

I really enjoyed this salad, the dressing was super yummy and just loved it overall.

My Adjustments:

- used sunflower seed butter instead of tahini in the dressing

- used bagged coleslaw mix instead of red cabbage and cauliflower (I'm just lazy and really who can use up a whole red cabbage?)

You could easily add some...

I have made these way too much lately. Probably 10 times in 6 months, because they are so surprisingly satisfying.

Let's talk about donuts for just a minute. I am a strong believer in skipping on healthy food that doesn't actually taste that good, especially when the real thing is a donut from a place like Donut Monster (for all you Hamilton/Burlington locals). They are next level donuts. Fried and flavourful pockets of gluten, sugar and sunshine. You literally can't go wrong.

Unfortunate...

Pictured is a little lunch action! The banana bread is actually on her site as well.

Kathryne Taylor is the queen of vegetarian recipe development. I seriously don't know how she does it. Cookie and Kate is her website, and if you haven't checked it out, I would highly recommend you do.

I am a ferocious recipe anarchist. I never seem to follow recipes because I'll think of some other way I'd like it,...

These bowls are a testament to a well stocked pantry/fridge, and become even easier with some meal prep. I highly recommend you try them ASAP.

They are incredibly flexible and probably one of my most favourite dishes that is actually healthy (because: french fries).

I can't take all the credit for these yummy bowls, I was inspired by Laura's bowls over at The First Mess to create my own unique version.

The recipe will make enough for 2 people, so double up if you need more. Or if you're cooking for one,...

I have a deep undying love for the freshness of southwest flavours. Put avocado and cilantro and lime on something and I'm so happy.  I know many people don't feel that way, but just have faith.

This is the grain salad I introduce to people who haven't ever made something like this before. Its quick, hearty, fresh tasting and super healthy - not to mention easy enough to throw together on a weeknight! And it makes for good leftovers for lunches (especially if you add the avocado and tomato only as needed...

These crackers are amazing. So incredibly easy, and so darn tasty. The only downside is that they require a food processor, but you don't need much else. In fact, the first three times I made these, I rolled them out with a wine bottle**, and used the lid of a dollar store toothpick container as my cookie cutter.  At some point I suppose I'll get baking supplies, but I figure: if I buy stuff, I'll bake stu...
